Nuovair N300T2 Industry: Blast chilling and shock freezing in action

Large production volumes require cooling technology that fits the workflow. The Nuovair N300T2 Industry with external condensing unit, distributed by NordCap, is a professional blast chiller and shock freezer for commercial kitchens and industrial food production.

When selecting a unit, performance is important, but batch size, the trolleys used, and integration into the overall production process are paramount.

Key product specifications

| Feature | NordCap specification |
| --- | --- |
| Item number | 4493003000 |
| Blast chilling | 300 kg product volume per cycle, from +90 °C to +3 °C |
| Shock freezing | 300 kg product volume per cycle, from +90 °C to −18 °C |
| Trolley capacity, optional | 2 rack trolleys for GN 2/1 or EN 600 × 800 mm; alternatively 4 rack trolleys for GN 1/1 or EN 600 × 400 mm |
| Design | Pass-through, with two doors |
| External dimensions W × D × H | 1,680 × 2,830 × 2,390 mm |
| Operation and control | 7-inch touchscreen, core temperature probe with two measuring points, USB and Ethernet interface for HACCP data |

The quantities apply per cycle. It is not possible to derive a binding hourly or daily capacity from this without further process data. Product type, portioning, containers, and actual loading should be taken into account during the design phase.

Planning production workflows holistically

Potential fields of application for project planning include central kitchens, collective catering, catering production, and food manufacturing facilities.

The specific requirements are decisive: What quantities leave the cooking area at the same time? Which products are to be chilled, and which are to be frozen? When must the next batches be processed?

A sensible workflow plan considers the provision of trolleys, loading, the chilling or freezing process, unloading, and subsequent transport. Cleaning and staff shifts also require time. Only by considering these factors can you determine if the chosen capacity fits the operation.

Considering trolley logistics and pass-through design

With a system of this size, trolley logistics must be part of the floor plan. Paths, door openings, maneuvering areas, and adjacent work areas must be coordinated with one another.

Compatibility with the actual trolleys used is particularly important. Container size alone does not replace the need to check trolley dimensions and loading.

The pass-through design can be used to organize loading and unloading spatially. How this creates a suitable flow of goods depends on the paths and the hygiene concept of the respective facility.

External condensing unit: Installation is part of the project

The scope of delivery includes an external refrigeration unit for outdoor installation with a weather-protection housing and winter control system. Rack and shelf trolleys as well as refrigerant are not included.

Before ordering, the unit location, piping, electrical connections, and maintenance access should be clarified. Technical design and installation must be coordinated with a suitable specialist company.

Also, consider the transport route to the final installation site and any potential construction work. A reliable cost comparison should include the unit, assembly, commissioning, required trolleys, and object-specific connection work.

Temperature control in daily operation

For each product group, define which programs are used, how loading is performed, and who checks the results. Measurement and documentation should be part of a clear workflow.

Transfer to subsequent storage also deserves attention. Suitable storage areas and transport routes help to carry the processed products forward in the planned sequence.

The right information for your inquiry

Prepare an overview of your products, batch quantities, desired workflows, and existing trolleys. Include a floor plan, available connections, and information on the potential unit location.

This creates the basis for suitable equipment selection and a project-specific quote.
